
Eggs Benedict, Omelettes, French Toast, breakfast is full of amazing dishes that don’t have to be exclusive to the before noon standard. One of the added benefits to breakfast for dinner is that it’s usually a lot faster to prepare if you are in a time crunch to get some food on the table by a decent hour.
We have done different variation of breakfast for dinner and one of my son’s favorites is pancakes, of course, what kid doesn’t want sugar coated fluffy carbs for dinner instead of brussel sprouts and carrots. This week we decided to go with a more southwestern breakfast, deconstructed version of huevos rancheros. The Spanish name of Huevos Rancheros translates to English as “ranch style eggs” and is thought to have originated on Mexican farms and ranches. The composition is usually two eggs covered in cheese, Chile, and pico de gallo, atop a corn or flour tortilla served with a side of potatoes and beans and sometimes a chile con carne (meat in chile).
One thing to keep in mind if you decide to recreate this dish is that you can make your own variation to suit your own preferences. Prepare you eggs the way you enjoy them best. If you prefer salsa to pico de gallo or don’t like chile, substitute it out. Would you rather have black beans to pinto beans? That’s an easy switch. The chile con carne is always optional and often seen in the traditional version to not be present making the Huevos Rancheros a vegetarian friendly dish. The thing about cooking is that the recipe is usually not an exact science like it is in baking. Getting creative with the execution of your dish is one of the best parts to making something of your own.

- Step 1: Peel and cube potato, usually 1/2 to 2/3 of a large potato per person is enough for a portion.
- Step 2: Warm up or refry some pinto beans in a medium size sauté pan.
- Step 3: Warm up chile con carne in a medium sauce pan.
- Step 4: Begin frying potatoes with olive oil, salt and pepper in a larger sauce pan.
- Step 5: Once the potatoes are complete, fry eggs to your preference and assemble each items on the plate, warm up a corn or flour tortilla on stove and Enjoy!
